Take your tuna salad to the next level!
Here's my recipe for Sneaky Tuna Salad
1 can of wild albacore tuna, not drained
1 can wild pacific sardines, you can drain if you like, but I usually do not
4 boiled eggs, chopped
2 tablespoons dijon mustard
1/4 cup homemade mayo, or other healthy mayo like Follow Your Heart Vegenaise made with grapeseed oil ( I make my own now )
2 stalks celery, finely chopped
1 small onion, finely chopped
optional: 2 small sweet pickles (this makes it more likely your children will enjoy it)
Salt and pepper to taste
After you have mixed everything well, let it chill in the fridge for half an hour or so. Then use as you would use your regular tuna salad. Tuck it into a pita pocket, roll it up in a tortilla, add it to sliced bread with cheese and make a tuna melt, top a great salad with a big scoop!
It's delicious and you won't even know the sardines are in there! Why should you eat sardines, you might be asking?
Well, it's because sardines are rich in numerous nutrients that have been found to support cardiovascular health. They are also one of the most concentrated sources of the omega-3 fatty acids EPA and DHA, which have been found to lower triglycerides and cholesterol levels; one serving (3.25 ounce can) of sardines actually contains over 50% of the daily value for these important nutrients. Sardines are an excellent source of vitamin B-12 which contributes to better energy levels.
Sardines are also packed with protein! Need I say more?
