Garlicky Sautéed Spinach with Mushrooms is a simple side dish you can add to just about any meal to increase your intake of leafy greens.
Spinach is one of the healthiest in the leafy green family due to a wide range of nutrients.
Spinach contains:
- calcium
- magnesium
- iron
- potassium
- zinc
- folate
- niacin
- Vitamins A, B6, C, K and traces of other essential vitamins
- thiamine
- riboflavin
Spinach is also low in calories but high in fiber, which helps to keep you feeling full.
The phytochemicals and antioxidants in spinach can help to protect eyes from harmful UV rays and reduce free radicals.
Spinach is fabulous for the liver in that it stimulates the production of glycogen which your body uses for energy.
Those taking medication to thin the blood are advised to limit the intake of leafy greens due to the Vitamin K. If you take an anticoagulant medication, please check with your doctor.
Spinach is also excellent for helping the body to reduce inflammation. It has an anticancer effect and also protects the skin from harmful UV rays.
Hopefully, this is enough to convince you to get more spinach in your diet!

Garlicky Sautéed Spinach with Mushrooms
Ingredients
- 5 ounce container of baby spinach
- 1 cup sliced baby portabello mushrooms
- 2 cloves garlic minced
- 1/2 teaspoon oil to coat pan
- salt and pepper to taste
Instructions
- Heat pan over medium heat
- Add minced garlic, cooking till fragrant, about one minute
- To the pan with the garlic, add sliced mushrooms and saute for two minutes till tender
- Last, add spinach, stirring - if all the spinach won't fit in the pan, add more as it wilts from the heat.
There probably won't be any leftovers, but if there are, take them to lunch the following day or add the spinach to a soup or casserole. So yummy! Using leftovers helps prevent food waste which helps keep food costs down and contributes to eliminating world hunger. Thanks for doing your part.
